Most of the recipes are healthy like the fudgy brownies that are gluten-free and rich, not with butter but with Avocados. Yes! Exciting, Right? But a few are created to satisfy your soul too like the soft and moist cinnamon buns. You will love all these recipes.
Story Time
On my journey to become a vegan from a vegetarian, I heard a lot of these above mentioned statements. In my recent trips to India, when I visited my family and friends and told them that I am trying to be a vegan or I can’t have dairy products when they were serving me chai, paneer dishes or ice-cream. Many had this expression of pitiness that I had to restrict myself from exciting and healthy foods. Some even said that they can not even think of being a vegan because they are a foodie and love food so much that they can not think about restricting some food items.
And many believe the same. That’s why through this article, I would like to show that you can have exciting foods and all your favourite foods, you just need to switch to the plant-based alternatives that can be used and create the same eating experience for you. Since, I was a vegetarian I did not try plant-based meat alternatives and I don’t even plan to do that.
Vegan Recipes that you MUST-TRY
1 – Tom Kha Gai Soup: There is something about Asian recipes that once you have it, you will fall in love with it. That’s what happened with us on our little trip to Prague. We had this vegan tom kha soup there and it was love at first bite. It is spicy but sweet. It is light but filling. And the flavours and the aroma is something that will remain with you for days. You must try this vegan tom kha gai soup.
2 – Thai Curries – Red & Green: Like I said, Asian recipes are aromatic, flavorful and extremely delicious. And if love them or want to try them, then you must try these vegan Red Thai Curry and Thai Green Curry. And if you want to make them even more delicious then make the curry paste at home itself. 3 – Vegan Mexican Burrito: It has got flavorful salsa (Pico de Gallo), aromatic, and spicy kidney bean filling, a hint of refreshing soup cream (made at home from plant-based curd), creamy avocado, and the crunch of salad greens. Everything is placed on the bed of seasoned, warm rice & cheese tucked inside a tortilla wrap. Is your mouth watering too? Mine is flooding 😀 Then try it today.
4 – Vegan Dal Makhani: I never thought that I would say this but I think I am never going to add butter or milk cream to my dal makhani. It sounds ironic because makkhan (butter) is in its name. Making it without it is like going against the law. Right 😀 But hey, butter or milk cream is added to make it rich and creamy and you can actually get that same texture and creaminess with some plant-based substitutes like cashew and seeds paste, coconut cream, or vegan butter. Infact, most of the creaminess it gets simply by slow cooking it. Surprised? Try and see yourself.
5 – Colourful Spinach & Beetroot Idli: This recipe makes a soft, smooth, colorful, and gorgeous breakfast. It will be loved by everyone.
