What is Bhel Puri?
Bhel Puri is a popular Indian street food, often served as a savoury evening snack and even made in festive occasions. You will find it in every corner of Mumbai (earlier Bombay), mostly in Juhu and Chowpatty. It is a chaat. The main ingredient for it is puffed rice (murmure or mamra). And a lot of different spices, chutneys, and other ingredients are added to it to enhance its flavours. It is a little bit sweet, a little bit tangy and very spicy and chilli.
The texture of bhel puri is cripy because of puffed rice and crunchy because of onions, peanuts, bhujiya, etc. It gets slightly soft and moist because of tomatoes, potato and different chutneys added to it. That’s why it is not supposed to be stored because that will make it moist and soggy and it will ruin your experience.
What is Bombay Style Sukha Bhel (Dry Bhel)?
Sukha Bhel is one kind of Bhel Puri itself. It is called sukha or dry bhel because we do not add liquid chutneys in it. But it gets its flavours from a dry chutney which is prepared with coriander, mint, lemon juice, garlic, etc. We do not add any ingredient that may make it very moist and soggy like tomatoes and tamaring chutney. Although, we do add onion, boiled potato, and dry coriander-mint chutney but they remain crispy for a little bit longer than regular bhel puri and even tastes good when they are slightly soft. That makes it a perfect snack to serve to your guests in your house party.
It is very popular in Maharashtra and even served as a quick morning breakfast there. It is good for those people who are always rushing. They can simply grab a packet of sukha bhel and enjoy it on the go.
What are the components of Bhel Puri?
Following ingredients are added in Bhel Puri:
- Puffed Rice – Make sure it is stale or soft. It should be crispy.
- Vegetables – Onion, Tomato, Boiled Potatoes, Lemon Juice, and Green Chilli.
- Chutneys – Tamaring Jaggery Chutney, and Coriander Mint Chutney.
- Spices – Chaat Masala, Red Chilli Powder, Roasted Cumin Seeds, Salt.
- Garnish – Pomegranate Seeds, Coriander Leaves, Peanuts, Bhujiya, Papdi.
What to do if the puffed rice gets stale or soft?
The puffed rice for bhel puri should be crispy. But if they are stale or moist, make sure to dry roast them in a pan until they turn crispy again.
Is this recipe vegan?

Can we store this recipe?
You can store puffed rice in an air-tight container for a few weeks. You can even refrigerate the prepared chutney in an air-tight container. It can also last for around 7 to 10 days. But I would not recommend storing the prepared bhel puri because this is something that needs to be enjoyed when prepared. Otherwise it gets soft and soggy.
