Diwali Special Sweet – Seviyan // Quick & Easy Festive Recipe

With the festive season, excitement comes with the pile of workload. We are invested in cleaning, decorating, shopping, and meeting friends and relatives so it is always a nice idea to make something quick and easy on D-day. This traditional Indian sweet recipe gets ready in no time and is perfect if you have a lot of guests coming home. It has always been a crowd favorite.

This recipe is different from the traditional Seviyan because it is made of plant-based (or vegan) milk instead of cow milk. And it tastes amazing. Do not hesitate and give it a try.

Story Time

I have a partial sweet tooth. I love Indian sweets a lot – from gulab jamuns to Ghewar, from Besan Ladoos to Halwa, I want all. But I can’t have a lot of cakes, brownies or chocolates. I like them too but only when I am craving.

Since I started reducing my dairy consumption, I have always thought about how will I enjoy my favorite Indian desserts. How will I make them vegan? Will they taste equally good with vegan substitutes? I even thought that I would reduce my dairy consumption for the most part of the year and enjoy these sweet Indian delicacies only during the festivals.

But now I started making all my favorite Indian desserts vegan. Let’s see how far I can go. I started with the easiest and the most popular Indian dessert – Kheer (rice pudding or milk rice). And this time I decided to make the vegan version of Seviyan or sheer khurma. It looks different from the usual seviyan and Jatin thought that it won’t be good but when he had it, he loved it. He even took the second serving. Wao! And even I couldn’t stop gobbling it 😀 I made a big batch and now we are going to enjoy it for days.

What is Sevaiyan or Sheer Khurma?

Seviyan or Sheer Khurma is a popular Indian sweet or dessert recipe made especially during the festival of Eid. It is made with thin vermicelli and milk, flavored with cardamom powder, and topped with some nuts. Some people even make it without milk or with thick seviyan or vermicelli. During the festivals, it is always easier to make because it takes much less time than any other Indian sweets and tastes equally good.

It is often referred to as sevaiyan, meethi sevai, seviyan or sheer khurma.

What type of vermicelli is best for Seviyan?

This recipe tastes best with seviyan which is as thin as a thread. You can even make it with thicker vermicelli but in my opinion, the thinner ones give it a much better texture and taste.

Easy Swaps

  1. Milk: Instead of almond milk, you can use a combination of almond milk and oat milk (or any other plant-based milk). For the non-vegan option, use cow milk.
  2. Sugar: Instead of refined sugar, you can add brown sugar or jaggery too. If you prefer liquid sweetener, you can even use that. If you want to use jaggery, add it in the end after switching off the flame else the milk might curdle.

Is this recipe vegan?

Yes. All the ingredients used in this recipe are vegan and plant-based. Usually it is made with cow milk but to make it vegan, I used almond milk.

How to store Seviyan?

You can easily store Seviyan in an air-tight container and refrigerate for up to 3 to 4 days. It thickens on refrigeration. You can eat it chilled or simply heat it with a little bit of vegan milk while serving. Cook for a few minutes to balance the flavor and enjoy.

  1. Heat a large saucepan and add coconut oil. Add Seviyan and roast until golden brown, 4 to 5 minutes. 
  2. Once it is roasted, add almond milk, cashews, almonds, cardamom, and chopped dates. Mix well. Lower the flame and cook until milk is thicker and you get your desired consistency, about 15 to 20 minutes. Stir occasionally.
  3. Once it gets thicker, switch off the flame and add sugar and raisins. Mix well. Serve hot.

On the other hand, vermicelli which is slightly thicker and available in smaller cut pieces is made of different flour like maida, rice flour, whole wheat flour, semolina, millets, etc.


Which vegan milk can be used to make seviyan?

Vegan seviyan can be made with any plant-based milk of your choice but in my opinion almond milk tastes the best or you can even use a combination of almond milk and oat milk or almond milk and coconut milk.
