Eid Special Seviyan – But Vegan.

Creamy, flavourful, and delicious – this vegan seviyan or sheer khurma hits just the right spot in every spoon. It is perfect for any time sweet cravings or for any festive occasion. If you love Indian desserts, if you are a vegan, or just want to reduce your dairy consumption, this recipe is for you. It is different from the regular seviyan which we make from the cow milk but honestly, it tastes good. It looks different because of the different color of almond milk which is not as white as cow milk. But keeping that aside, it is surprisingly tasty. Don’t hesitate and give it a try.

Story Time

I have a partial sweet tooth. I love Indian sweets a lot – from gulab jamuns to Ghewar, from Besan Ladoos to Halwa, I want all. But I can’t have a lot of cakes, brownies or chocolates. I like them too but only when I am craving.

Since I started reducing my dairy consumption, I have always thought that how will I enjoy my favorite Indian desserts. How will I make them vegan? Will they taste equally good with vegan substitutes? I even thought that I will reduce my dairy consumption for the most part of the year and enjoy these sweet Indian delicacies only during the festivals.

But now I started making those Indian desserts vegan. Let’s see how far I can go. I started with the easiest and the most popular Indian dessert – Kheer (rice pudding or milk rice). And this time I decided to make the vegan version of Seviyan or sheer khurma because it is Eid time. The only way we have grown up celebrating Eid is by making this delicacy. This time I decided to make it plant-based. It looks different from the usual seviyan and Jatin thought that it won’t be good but when he had it, he loved it. He even took the second serving. Wao. And even I couldn’t stop gobbling it 😀 I made a big batch and now we are going to enjoy it for days.

What is Sevaiyan or Sheer Khurma?

Seviyan or Sheer Khurma is a popular dessert recipe made especially during the festival of Eid. It is made with thin vermicelli and milk, flavored with cardamom powder, and topped with some nuts. Some people even make it without milk or with thick seviyan or vermicelli. It takes much lesser time than kheer.

It is quite an easy and popular dessert recipe to make on festive occasions or when guests come over.

It is often referred to as sevaiyan, meethi sevai, seviyan or sheer khurma.

What type of vermicelli is best for Seviyan?

This recipe tastes best with seviyan which is as thin as a thread. You can even make it with thicker vermicelli but in my opinion, the thinner ones give it a much better texture and taste.

Easy Swaps

  1. Milk: Instead of almond milk, you can use a combination of almond milk and oat milk (or any other plant-based milk). Instead of vegan milk, you can even use cow milk.
  2. Sugar: Instead of refined sugar, you can add brown sugar or jaggery too. If you prefer liquid sweetener, you can even use that. If you want to use jaggery, add it in the end after switching off the flame else the milk might curdle.

Is this recipe vegan?

Yes. Of course.

This is a vegan and completely plant-based seviyan recipe. I did not make it using dairy or cow’s milk. But if you are a vegetarian or non-vegetarian, you can simply replace the vegan milk with any dairy milk of your choice.

How to store Seviyan?

You can easily store seviyan in an air-tight container. Refrigerate and it can be used for up to 3 to 4 days. It thickens on refrigeration. You can eat it like that or simply heat it with a little bit of vegan milk. Cook for a few minutes to balance the flavor and enjoy.

  1. In a deep pan, add rice, coconut milk, cardamom powder, almonds, and cashews. Let it come to a boil and then lower the flame. 
  2. Cook on low flame till it thickens. It will take around 1 to 1.5 hours. Keep stirring in between. 
  3. Once it gets thicker, taste and check if it has a strong or mild coconut flavor. If it is strong for your taste, add oat milk and baking soda. Mix well and cook till it reaches the desired thickness. 
  4. Add baking soda only if it is needed to balance the coconut flavor.
  5. Once it thickens, add sugar and mix well. Cook for another 5 minutes. Switch off the flame. 
  6. Add raisins and rose water. Mix and serve.

Seviyan and Pheni are similar but Pheni is much thinner than seviyan. You don’t even need to cook pheni for a long time. You can simply add hot milk to it, let it sit for a couple of minutes and it will be softened enough to eat.


What is Seviyan made of?

The seviyan which is as thin as a thread and used to make dessert (meethi seviyan or sheer kurma) is generally made of refined flour or maida. On the other hand, vermicelli which is slightly thicker and available in smaller cut pieces is made of different flour like maida, rice flour, whole wheat flour, semolina, millets, etc.


Which vegan milk can be used to make seviyan?

Vegan seviyan can be made with any plant-based milk of your choice but in my opinion almond milk tastes the best or you can even use a combination of almond milk and oat milk or almond milk and coconut milk.
