Amla – one of the richest sources of Vitamin C. It has more Vitamin C than an orange. It is highly rich in antioxidants and deserves to be called a superfood. Amla or the humble Indian Gooseberry is perfect for the winter season to boost immunity and prepare your body to fight infections. Since it is very sour, it is difficult to consume it raw. But you can try this recipe and eat it regularly. It is easy and quick to make and you can eat a good amount of amla without worrying about its sour taste.

Story Time

I remember the time when I used to have one amla every day. Every Day! I was in college then and it was a part of my regular diet after breakfast. You won’t believe what happened after consuming it for a long time. My hair improved in terms of volume and shine; the best thing is that my eye power improved. I checked my eyesight, and the guy said my number was reduced. And the only different thing I did was – eat one amla every day. That day I realized the power of this tiny little fruit.

In fact, after my father’s heart surgery, his immunity became very poor. He was suggested to consume vitamin C-rich food but consuming amla was very difficult for him. He refused to eat that. Then I made this recipe for him and guess what, now he is the one who keeps asking my mom to make this for him. He eats it as is or with parathas too. Isn’t it amazing?

Amla is the Hindi word for Indian Gooseberry. It is widely available in India, especially during the winter season. Boil Amla
  1. Boil water in a saucepan. 
  2. The water should be enough to submerge Amla (Indian Gooseberry).
  3. Once the water is boiled, switch off the flame. Add amla to the water, cover, and let them sit for around 5 to 7 minutes or until they become slightly soft. 
  4. Do not let them sit in the hot water for long. The skin of Amla will come out and they become extra soft.
  5. Drain off the water and let the Amla cool down slightly so you don't burn your fingers while cutting them. 
Fry Amla
  1. You will see some lines on the surface of Amla. Cut along those lines and the pieces will start to come off easily. Remove the seeds.
  2. Once you get the idea, you don't need to follow the lines. Simply remove the seeds and cut Amla into pieces as you prefer.
  3. Heat some oil in a pan. Add cumin seeds and let them sizzle for a few seconds. 
  4. Add asafoetida, turmeric powder, and salt. Mix well for a few seconds on medium-low flame. 
  5. Avoid burning of spices.
  6. Add amla pieces and stir well. Taste and adjust seasonings. Let them cook for 4 to 5 minutes on medium-low flame. 
  7. Remove from the flame and let them cool completely. Store in the refrigerator for a longer shelf life. 
  8. They taste better the next day.
Notes
  1. Experiment with other ingredients like mustard seeds, curry leaves, and thinly sliced ginger. 
  2. They can stay in the refrigerator for 2 to 3 weeks. I would recommend making smaller quantities to prevent spoilage. You can even store them in the freezer. Thaw before serving. The taste and the texture change in the freezer.
