Vegan Pad Thai Noodles – Quick & Easy One-Pot Recipe

Sweet and sour sauce, crispy tofu and crunchy veggies, kick of lemon, and nuttiness of roasted peanuts, and all of that with some soft and chewy rice noodles. Is your mouth watering? Because mine does 😀

It is a simple meal but looks like you are having a party at home. It is perfect for the days when you want restaurant-like food but doesn’t want to go to any restaurant (or order anything). Generally, Pad Thai Noodles are made with meat or eggs. But we are going to make the vegetarian or vegan version of it. This is the recipe made of roasted tofu and some crunchy veggies, all coated in some sweet and sour sauce.

What is Pad Thai?

Pad Thai (or Phat/Phad Thai) is a stir fry rice noodles recipe that is served in Thailand. It is delicious Thai cuisine. It is mainly a street food, typically made with rice noodles, meat, eggs, peanuts, lemon juice, bean sprouts, and some other vegetables. It is the sweet and sour sauce that makes it very tempting. All the ingredients are stir-fried in a hot wok that retains the crunchiness of the veggies.

Pad Thai is a sweet-savory-sour stir fry noodles recipe that is made with thin and flat rice noodles. Generally, you don’t need to boil the rice noodles, just soak them in some water (preferably hot) to soften. Follow the packet instructions for softening the rice noodles. Some soak them for an hour in room temperature water.

  1. Veggies: Use any veggie of your choice – mushrooms, spring onion, chives, bell peppers, bean sprouts.
  2. Sesame Oil: Use any cooking oil instead.

Roasted Tofu
  1. In a pan, brush some oil (around 1 Tbsp). Sprinkle some salt. 
  2. Place tofu block on the pan, brush oil all over it, and roast from all the sides till it is slightly golden and crispy. Once done, cut it into cubes and keep it aside.
Soften Noodles
  1. Place rice noodles in a large bowl and pour over hot boiling water. Let it sit until the noodles are soft but firm. Once done, remove from the water.
  2. Follow the packet instructions for cooking or softening rice noodles.
Stir Fry Noodles
  1. In a pan, add 2 Tbsp of sesame oil and heat.
  2. Add chopped garlic and saute for around a minute until slightly golden. DO NOT brown them. 
  3. Add onions and saute until cooked and translucent. Once onions are done, add cabbage, carrot, capsicum, and green chili. Saute for a minute.
  4. Mix sauce in a bowl - vinegar, soy sauce, tamarind paste, jaggery powder & water (if needed). Pour over the sauce and tofu cubes in the pan. Mix and combine everything well. 
  5. Add noodles and salt to taste. Mix well. Switch off the flame and finish it off with some lemon juice. Your noodles are ready to be served.
  6. Serve them in a bowl and top it up with some roasted peanuts, sesame seeds, and chili flakes. Enjoy your happy meal.
