My Favourite kind of Men – Ra-Men 😀

Okay Okay, I stole this line from the internet but my feelings are totally real. Do you have doubts? Well, then you have to try this bowl of soupy heaven to believe me.

When the cold days arrive, all we want is some comfort in a bowl. & this vegan ramen is just perfect for those soupy cravings. It is packed with noodles – everyone’s favorite – dipped in a flavorful vegetable broth and topped with some crunchy peanuts. & the best of all – Homemade Chilli Oil. With that, it hits just the right spot in every slurp.

It is quite a simple, quick, and easy soup recipe. It is a crowd-pleaser and the aroma – your entire home will have that. So, make it today and enjoy this Asian meal (or starter) with your family. Everyone will fall in love with this.

STORY TIME

I never thought about making ramen till I saw everyone eating it every time in K-Dramas. When I first saw Captain Ri making fresh noodles to make warm and comforting ramen for Se-Ri in the most popular K-drama “Crash Landing on You”, I started drooling (*ahem ahem over ramen silly). That was love at first sight. And it deepened when I watched the second K-drama – Something in the Rain. Holding the chopsticks to take a bite of noodles dipped in the pool of flavors, lifting the bowl of steaming hot broth, and slurping it – That’s Irresistible so I decided to make it myself, just like Captain Ri 🙂

I started watching different recipes and I wanted something that can satisfy my taste buds too. After watching tonnes of videos and reading blogs, I thought that there is no rule in making ramen. Just like love. Love can’t survive in rules, right? And even if there are rules, Let’s break them 😀

WHAT IS RAMEN?

Ramen is a popular Japanese cuisine. It is a soup. This soup is packed with noodles and a light flavorful broth. You can top it up with any veggie of your choice. If you are a non-vegetarian then you can add some meat or eggs too. It can be garnished with some peanuts, sesame seeds, or simple chili oil for a nice kick.

I believe there is no set recipe for noodle soup (or any recipe for that matter). You can experiment and re-design to suit your taste buds. We get so many kinds of noodles these days – whole wheat noodles, rice noodles, glass noodles, and millet noodles. We also get some flavor-infused noodles like pumpkin noodles, wakame noodles, or whatnot.

PREP AHEAD

1 – Chilli Oil

One thing that takes the taste of ramen to the next level is homemade chili oil. It makes the soup even tastier. We both just love it. We have a recipe for homemade chili oil and it has become our kitchen essential now. You can make so many different things with this – Khow suey, chili oil ramen, chili garlic noodles, chili garlic fried rice. It is good to have it at all times for those lazy days when you don’t want to cook. Just throw in some veggies in chili oil and add rice or noodles. That’s it. & you make great restaurant-style food at home.

2 – Vegetable Broth

You must try our vegetable broth recipe which I make from all the vegetable peels which we mostly discard. You will be surprised to see how much flavorful and aromatic this broth can get. Vegetable peels contain so much nutrition and making broth with that is a nice idea. Also, it creates less waste too which is the need of the hour.

EASY SWAPS

  1. Use any noodles that you have got – whole wheat noodles, rice noodles, millet noodles, glass noodles or even Maggi. Oh yeah. That’s our little secret.
  2. Use any stock that you have. I always prefer some homemade fresh vegetable stock but you can also try with some store-bought stock cubes.
  3. This soup tastes very nice with a little sprinkle of sesame seeds and some crushed peanuts on top.
  4. You can use any vegetable in this soup. I mostly prefer mushrooms and bell peppers in my noodle soups but you can even add zucchini, broccoli, celery, carrot, etc.

IS THIS RECIPE VEGAN?

Yes. Of course.

This recipe is made with 100 percent whole wheat flour noodles. It has got vegetable broth. All the ingredients are plant-based. You must try it.

Steps

Soupy Broth
  1. Heat some oil in a pan.
  2. Once the oil is heated, dump in the chopped onion, garlic, and ginger. Saute for 2 minutes.
  3. Throw in the diced veggies - mushrooms. broccoli &amp; snow peas. Add sambal oelek and chili powder. Mix everything well. 
  4. Don't overcook the veggies. We need them to be crunchy.
  5. Add the vegetable broth and let it come to a boil. 
  6. Adjust the salt to taste and switch off the flame. The soup is ready.
Other Preparations
  1. Heat water in a pan. Add some salt to it. Boil. 
  2. Once the water is boiled, add noodles and cook as per the packet instructions. Strain the noodles. 
  3. Add boiling water to the frozen edamame and let it rest for a couple of minutes. Drain the water.
Roast Tofu
  1. In a bowl, add tofu slices. Pour over some soy sauce and sprinkle some salt. Coat the slices with the sauce. 
  2. Heat a pan and brush some oil on it. Place the tofu slices and roast from one side. Flip over and roast from another side too. Keep them aside. 
Serving
  1. In a bowl, add soy sauce, rice vinegar, and chili oil. 
  2. On top of that goes some boiled noodles. Pour in the soupy broth as needed. I prefer dipping the noodles in the broth.
  3. Top it with some veggies that are there in the soupy broth. Also, add some edamame, toasted tofu slices, and peanuts on top. 
  4. Finish it off with a sprinkle of sesame seeds, spring onion, chili threads, and some more chili oil. 
  5. Your homemade happy meal is ready. Enjoy it while watching your favourite K-Drama :)

What is a vegetable broth or vegetable stock?

Vegetable broth or vegetable stock is the same thing. It is a flavourful water which is made of any kind of vegetables (or fruits) with some herbs and spices added to it. The water is then brewed on the lowest flame for around 1 to 2 hours. This time allows it to absorb all the nutrients and flavors from the veggies. The water is then strained and stored in jars. You can store it for up to a week or 10 days in your refrigerator. Some people also store it for a month but I never tried that. I make a big batch during the winter and finish it within a week.

You can also make vegetable broth using all the vegetable peels. I make it like that and you will be surprised how some vegetable peels which we discard can add so much depth of flavor to the stock. Moreover, it reduces your kitchen waste too which is also nice and eco-friendly.


Is eating noodle soup healthy?

I believe that no food is healthy or unhealthy. It is your relationship with the food that makes the food healthy or unhealthy for your body. Noodle soup contains a light and nutritious broth which is packed with vitamins, minerals, and antioxidants. It can support your health when you are sick or have a cold. It boosts your immunity. If you make non-veg broth then it will provide you proteins too. There are plenty of noodles available these days – whole wheat, millets, rice, etc. Just check the ingredients and choose the healthier option. Store-bough ones might contain a lot of salt or if they are packed in aluminum tins then again it won’t be a healthier choice. But homemade ones are always the best and healthy option. If you don’t have time then just look for healthy store-bought soups.
