Steps

Beans
  1. Rinse the navy beans and pick out any debris.
  2. Place the beans in a large pot and cover with 6 cups (1.4L) of water.
  3. Bring to a boil over high heat, then reduce the heat to low and simmer for 5 minutes.
  4. Remove from heat and let the beans soak for 1 hour.
  5. Drain and rinse the beans.
  6. Return the beans to the pot and cover with 6 cups (1.4L) of fresh water.
  7. Add 1 tsp (5g) of salt and bring to a boil.
  8. Reduce the heat to low and simmer, covered, for 1-2 hours, or until the beans are tender.
  9. Drain any remaining liquid and set aside.
Sauce
  1. In a medium bowl, whisk together the tomato paste, water, apple cider vinegar, maple syrup, soy sauce or tamari, mustard, garlic powder, paprika, and ground cumin.
  2. Pour the sauce over the cooked beans and stir to coat.
  3. Transfer the bean mixture to a 2-quart (2L) baking dish.
  4. Cover with foil and bake in a preheated 325°F (160°C) oven for 3 hours, stirring occasionally.
  5. Remove the foil and bake for another 1-2 hours, or until the sauce is thickened and the beans are tender and caramelized.
