  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, mix together the vital wheat gluten, chickpea flour, nutritional yeast, garlic powder, onion powder, fennel seeds, smoked paprika, and liquid smoke.
  3. Add the warm water and soy sauce, and stir until well combined.
  4. Knead the dough for 2-3 minutes, until it becomes tighter and more elastic.
  5. Roll the dough into 1-inch (2.5 cm) balls and place them onto a lined baking sheet.
  6. Bake for 15-20 minutes, until the meatballs are firm and lightly browned.
Sub Assembly
  1. Preheat your oven to 350°F (175°C).
  2. Slice your baguette in half, lengthwise.
  3. Warm tomato sauce in a small saucepan over medium heat.
  4. Place vegan meatballs into the saucepan and coat well in tomato sauce then remove meatballs.
  5. Place the bottom half of the baguette onto a baking sheet, then top with tomato sauce and vegan cheese.
