  1. Line a 12-cup muffin tin with paper liners.
  2. In a small bowl, whisk together the peanut butter filling ingredients.
  3. In a medium microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave for 30 seconds, then stir. Microwave for another 30 seconds, then stir again. Repeat until the chocolate is completely melted and smooth.
  4. Spoon about 2 teaspoons of melted chocolate into each muffin cup, spreading it up the sides about 1/4 inch (6mm). Make sure you save some chocolate for the tops!
