Story Time
Let me share how I came up with the idea of this recipe. When Jatin and I were living in Pune, India, we had a favorite cafe – CCD. Yes! Cafe Coffee Day. The main attraction to choose a home where we were living was this cafe nearby. We saw it and we were instantly sold. See, a lot can happen over a cup of coffee. 🙂
We used to go there a lot – weekdays, weekends, special occasions, get together with friends. And we always ordered this one sandwich which was so delicious. The bread was very soft and flavorful. The stuffing was creamy, and cheesy, with vibrant colors of spinach and corn. It was addictive! It was their Spinach and Corn Sandwich. And then we decided to make the same sandwich at home. We tried and loved the simplicity of the recipe that we created. Plus, it was healthy!
We started making it a lot. We even shared it with our neighbors and friends and they also loved it. A Lot! Everyone was shocked when we told them, there was no mayonnaise in it. That made them more curious about the creaminess of our sandwich. It was all achieved with milk. No Mayonnaise or heavy cream! One day we decided to explore more variations using these ingredients and since we love pasta, we decided to make Spinach Corn Pasta. That’s how we gave birth to this humble recipe.

How to cook Pasta?
Pasta is easy to cook but if left unnoticed, you can even ruin it easily. They are attention seekers. 🙂 Cook it as per the packet instructions or follow the below-mentioned tips to cook it just right:
- Take a large saucepan to boil pasta. Small pans overcrowd the pasta and make them sticky and mushy.
- Add ONLY SALT in water to boil pasta. NO OIL is needed.
- Add pasta only when the water starts to boil.
- Keep stirring in between to prevent them from sticking with each other.
- Pasta takes around 10 – 12 minutes to cook. Keep an eye out, and take a bite of it to see if they are cooked. Boil only until they are just cooked. Then remove from the flame and drain off the water.
Is this recipe Vegan?
I am afraid not. This recipe is not plant-based or vegan. But you can customize it as per your preferences and taste. Substitute cow milk with plant-based milk like almond milk, soy milk, or oat milk.
