Sweet Potato

What are the benefits of Sweet Potatoes?

Do the Okinawans, one of the longest-living populations, really live as long as people claim? (It may be hard to find birth certificates from the 1890s!) Indeed, validation studies suggest that they do live that long.

If you look at the traditional diets of more than 2,000 Okinawans, this is how it breaks down: less than 1 percent of their diet was fish, less than 1 percent was other meat, and the same with dairy and eggs. So, the Okinawans’ diet was more than 96 percent plant-based and more than 90 percent whole food, plant-based as they ate very few processed foods. What’s more? Their diet wasn’t just overwhelmingly whole food, plant-based. Most of their diet was vegetables, and one vegetable in particular—sweet potatoes.

Ingredients

        Vegetable and Fruits

          Nuts & Seeds

            Spices and Herbs

              Sweetener

                Steps

                1. Prep Ahead 1: Peel and steam sweet potatoes. Mash once cooled.
                2. Prep Ahead 2: Preheat oven to 180°C, top/bottom setting. Line a baking sheet with parchment paper or a silicone mat for easy cleanup.
                3. Add all the ingredients to a mixing bowl and mix well.
                4. Scoop out small portions of the sweet potato mixture and shape them into bite-sized balls or patties using your hands. Place them on the prepared baking sheet, leaving a little space in between.
                5. Bake the sweet potato bites in the preheated oven for 25-30 minutes, or until golden brown and cooked through, flipping halfway through cooking for even browning.
                6. Once the sweet potato bites are done baking, remove them from the oven and let them cool slightly on the baking sheet before transferring them to the cooling rack.
                7. Serve the sweet potato bites as a nutritious snack for toddlers. Store the leftover sweet potato cookies in an airtight container in the refrigerator for up to a week.
                Note
                1. This mixture will yield around 25 pieces of cookies.
                2. Customize it as per your choice. Use any nuts and seeds available.
                3. I would recommend not adding raisins or dried berries. They burn faster and leave a bitter taste.
