A light broth packed with vegetables, crispy tofu, and hearty buckwheat noodles – Veg Soba Noodle Soup with Crispy Tofu. Just add your favorite spices and vegetables and make your own version of this delicious soup.

It is a simple soup recipe, not very elaborate, and takes very little time to prepare & cook. And the taste is just amazing. It is an invigorating soup and quite filling too. In fact, even after having a big bowl, you will still feel light. These qualities make it just perfect for dinner.

Story Time

When I started making noodle soups or Ramen at home, I kept it very simple. By that I mean, cook onion, garlic, and some veggies, pour the broth, boil noodles, and then plate with some soy sauce, vinegar, and maybe some other toppings. I did not know that I could experiment with it so much. Just by adding different kinds of flavors to your broth, you get a new kind of noodle soup or ramen at home. & it looks fancy.

Only when we started eating ramen in restaurants, we came to know about different flavors and varieties. We went to a restaurant and they had 10 different kinds of broth. For example, miso broth, bean chili broth, peanut and garlic broth, etc. Jatin and I ordered different kinds of ramen and they both tasted delicious and absolutely different from each other. More or less, the ingredients were the same but the broth was different. Then Jatin told me that I should also do such experiments. That one beautiful evening opened the creative side of my brain and I created peanut ramen, spicy miso ramen, Maggi Ramen, and many other noodle soups. We loved them all. Noodle Soups are our go-to dinner or lunch recipe during the colder days in Fall or Winter season.

The moral of the story – do not hesitate to experiment in the kitchen. Just like we say, a good recipe is the result of some fearless kitchen experiments.

What is Miso Paste?

Miso paste is a Japanese paste-like seasoning ingredient that is made by the fermentation of soybeans. It is a staple ingredient in many traditional and modern Asian recipes. It is used to make soup, flavored broth, noodles, pickles, fish, etc. Miso paste adds a nice umami flavor to the recipes that make you crave it more and more.

Depending on the ingredients, process, and duration of fermentation, we see many different kinds of miso paste in the stores. The most common ones are – dark or red miso and light or white miso. The darker the color, the stronger the taste. Both taste different and unique.

What is Soba Noodles?

Soba is a Japanese word for Buckwheat. Soba noodles are thin Japanese noodles made from buckwheat flour. It is widely popular in Asian cuisine and used to make stir-fry noodles, ramen, or noodle soups, and even served boiled with some dipping sauce.

You can easily find them in any Asian store.

What is Vegetable Broth?

Vegetable broth is also known as vegetable stock. It is a vegetable flavor-infused liquid. All kinds of vegetables (and fruits), herbs, whole spices, and salt are added to the water. It is cooked on a simmer for 1 to 2 hours till the veggies infuse all the flavors and aroma in the water. The longer you cook, the longer it lasts in the refrigerator. Traditionally it is cooked for a couple of hours. The beauty of the recipe is that there is no set recipe because you can make it with whatever vegetable is available in your home.

I always make it using veggie peels or vegetable discards like the outer cover of cauliflower, peels of onion, garlic, carrot, potato, etc. I even add the veggies that I haven’t used and that’s lying in my refrigerator. Sometimes, I even add fruits like apples or pears. You can even saute the whole spices in some oil and then add all the vegetables and water. This is a very flexible recipe. So, just experiment and see what comes out after an hour or two of brewing.

Easy Swaps

  1. Vegetable Broth: For a quick and easy solution, use a bouillon cube. But the homemade broth is more natural, and chemical-free. If you are in a hurry, you can even use water.
  2. Toppings: Use any topping of choice like fried tofu cubes, marinated tofu, broccoli, celery, enoki mushrooms, nori sheet, etc.
  3. Soba Noodles: Any other noodle will also work.
  4. Miso Paste: You can use white or red miso paste too but you will have to adjust or increase the quantity.

Steps

Crispy Tofu
  1. Make sure to squeeze out all the water from tofu before cutting it into cubes.
  2. Prepare marinade by mixing together - soy sauce, lemon juice, maple syrup, chili flakes, and garlic powder.
  3. In a zip-lock bag, add tofu cubes and marinade. Zip it and shake well until all the cubes are well coated.
  4. You can marinate in a bowl but zip-lock method is surprisingly much easier.
  5. Let it rest for around 20 minutes before frying.
  6. If time permits, refrigerate it overnight to develop more flavours.
  7. Once rested, lightly dust them with some cornstarch. We need a very thin layer of cornstarch on them. 
  8. Heat some oil in a pan, place tofu cubes, and fry until golden brown. Flip and fry from all the sides. It would take 5 to 7 minutes on medium flame.
Boil Noodles
  1. Boil water with some salt in it. Once it starts to boil, remove from the flame.
  2. Add soba noodles and let it rest until just cooked and soft, about 3 to 5 minutes. Check the packet for cooking instructions.
  3. Drain off the water and spread them on a large plate. Brush with sesame oil. Toss using a fork, and apply sesame oil all over. 
  4. No need to rinse boiled noodles in cold water.
Soup
  1. Soak dried shiitake mushrooms in hot boiling water until soft, about 15 minutes. 
  2. Once rehydrated, slice them if needed. You can also use them whole. 
  3. Add all the soup ingredients in a large saucepan and boil. It would take around 15 minutes. Remove from the flame once it starts to boil. Taste and adjust salt. 
  4. To dissolve miso paste, use a sieve and strain it in the liquid using a spoon. Refer the photo for clarity.
Serving Suggestion
  1. Place noodles in a bowl. Pour over the soup making sure you get veggies too in the bowl. Top it off with some crispy tofu. 
  2. Garnish with crispy fried onion, sesame seeds, bean sprouts, and chili oil. Slurp and enjoy.
Notes
  1. Use any vegetable of choice like button mushrooms, broccoli, pak choi, bell peppers, spinach, etc.
  2. Instead of vegetable broth, use a bouillon cube with water. Or just add water and adjust the seasoning.

You can use water instead of vegetable broth but the taste and flavours would differ. Vegetable broth is prepared by slow-cooking vegetables, spices, and herbs in water. It adds a depth of flavor to the soup. If you don’t have it, go ahead with water and you will still enjoy the soup. Adjust the seasonings accordingly.
