Street Style Chowmein – It’s Yum!

Who doesn’t like simple veggie stir fry noodles? And the answer is – No one.

This recipe is quite simple and still tastes so delicious and addictive. You would want to have it every week. I am saying this because we do. Just throw in some veggies, add some basic sauces, dump in the noodles, and done. Our street-style chow mein is ready. And when I say street-style, I meant the deliciousness of the streets of Delhi. There you find some good Indo-Chinese noodles. They may not be authentic noodles but they sure taste good. Obviously, the homemade version tastes different but it will satiate your cravings.

Story Time

Jatin loves the street-style chow mein of Delhi. He had eaten it a lot while growing up. He still tells me his story every now and then that he loves chow mein so much that whenever he ordered it at home, he used to eat it with his hands and not with any spoon or fork. He says that with hands you can eat more quantity in each bite 😀 And of course, some things taste better when eaten with hands. For me, it is rajma chawal.

When we left Delhi, he started craving that same chow mein taste. We tried to replicate the same taste at home and we are still doing that. We even tried adding a lot of oil and fewer veggies just like the street vendors do, and that took us closer. But obviously, you can’t get the exact same taste because the street vendors have a different kind of set-up altogether. They have huge woks, high heat, and some of their secret ingredients too. Mostly Jatin makes this recipe at home and whenever he does, he opens the youtube and checks out a bunch of street style chow mein recipes. And that is how we both satiate our cravings. And let me tell you one secret, I enjoy the homemade version more. It has Jatin’s secret ingredient – Love 😀

What is Chow Mein?

Chow Mein is Chinese stir-fry noodles with some veggies and basic sauces. It is also made with meat or tofu too. There are many different versions of the recipe that may not be authentic but tastes amazing. It is quite popular in India, especially on the streets of Delhi, India. You can’t get that same taste anywhere else, not even in big Chinese restaurants.

Which noodles are used in Chow Mein?

Chow mein is a stir fry noodles recipe that is made with thin, long, and non-sticky wok noodles. You can even get it as Chow Mein Noodles in the stores. They are mostly made with all-purpose flour (Maida) but now you get noodles made with different kinds of flour. We mostly prefer whole wheat flour noodles or millets noodles.

While cooking, follow the packet instructions for softening the noodles.

  1. Veggies: Use any veggie of your choice – mushrooms, spring onion, chives, bell peppers, broccoli, zucchini, etc.
  2. Cooking Oil: You can make it with sesame oil too.

What does Chow Mein taste like?

Chow Mein is a savory-sour Chinese noodles recipe. The veggies are stir-fried and crunchy. It has got a savory flavor from the soy sauce and a hint of sourness from the vinegar.

You can even add Ajinomoto or MSG. But we avoid that at home.

Indo-Chinese Stir Fry Noodles

Who doesn't like some basic and simple stir fry noodles? This is one recipe that is loved by almost all age groups. When made at home, you can dump in little extra veggies and call it a day. Perfect for lunch or for a quick dinner. It feels like party at home :)

Boil Noodles
  1. Boil water in a large pan and add some salt to it. Once the water starts to boil, add noodles and stir. Cook noodles as per the packet instructions. 
  2. Once the noodles are just cooked, drain out the water. 
  3. Spread noodles on a large plate to cool completely. Brush oil. Flip using a fork and brush oil all over. Keep it aside and let them cool completely. 
Stir-Fry Noodles
  1. In a large wok, heat some oil.
  2. Keep the flame high at all times.
  3. Add onions and saute until translucent. 
  4. Add carrots and french green beans. Cook for a minute. 
  5. Then add bell peppers and cook for another 30 seconds. 
  6. In the end, add cabbage. Stir and cook for a minute. 
  7. Mix sauces in a bowl and add them to the veggies. Mix well. 
  8. Add cooked noodles and toss everything well. Remove from the flame and garnish with some chopped spring onions. Serve right away. Your happy meal is ready. 
  9. While serving, add some homemade chili oil on top. It tastes amazing.

What can I use if I don’t have chow mein noodles?

If you don’t have chow mein noodles, you can use any noodles that you can get – ramen noodles, soba noodles, pad thai rice noodles, udon noodles, etc. Use any long, thin, non-sticky noodles. Some noodles are very clingy and sticky. It is difficult to use them in stir fry noodles.


How to boil noodles for Chow Mein?

Getting the right texture of noodles is very important. Overcooked or mushy noodles ruin the experience. Follow the below-mentioned points to boil the noodles perfectly:

  1. Follow the packet instructions to cook them. Generally, the time needed to cook them is written on the packet. But if it is not given, then boil the water in a large pan and add salt to it. Once the water is boiled, add noodles. Stir the noodles using a fork and keep an eye on them. When they are just cooked, remove them from the flame and drain the water.
  2. Then place them on a large plate or tray so that they cool down completely and won’t stick to each other because of all the starch.
  3. Brush oil. Toss using a fork and brush oil all over. Let it cool completely.
  4. Try to cook noodles beforehand so that they are completely cooled down and won’t get mushy while stirring.
