Steps

  1. In a large bowl, roughly mash chickpeas using a fork or a potato masher leaving some texture for added crunch.
  2. Add avocado pieces to it and mash until smooth and creamy. 
  3. Add the rest of the ingredients - spring onion greens, grated carrot, red bell pepper, pickled jalapenos, lemon juice, herbs and seasonings, and sunflower seeds. Mix until well combined and all the seasonings are evenly distributed.
  4. Toast the slices of bread (preferably sourdough bread) until golden brown and crispy. 
  5. Start assembling first with the lettuce or salad leaves. Spread a generous amount of the sandwich mixture. Layer the optional toppings such as sliced cucumber, tomato, and pink radishes. 
  6. Place another slice of the toasted bread on top. Repeat the same with other slices of bread. 
  7. Slice the sandwiches in half diagonally or enjoy them whole, depending on your preference.
