The Bombay Aloo Masala Sandwich (Spicy Mashed Potato Sandwich) is one iconic sandwich recipe that is loved by everyone. It features layers of toasted bread, especially white bread loaf, spicy filling of mashed potatoes, and coriander and mint chutney. It is simple but oozes with flavors. This sandwich recipe is very popular on the streets of Mumbai (earlier Bombay) or Maharashtra. But these days you can find it in almost every nook and corner of India.

Everybody makes their version of this sandwich and they all taste equally good. I think it is because of the versatility and uniqueness of Potato. What do you think?

Can we take Bombay Masala Sandwich to school?

It tastes best when served right away because you get a nice crispiness of toasted bread along with the flavors of potatoes. It tastes divine especially when served hot with a hot cup of Ginger Chai.

You can even pack it for a school lunch box, picnic, or even take it to your office. It was my constant favorite in school. This recipe makes a perfect snack for your trips too. Even today, when my mom goes out on a trip and my brother or father is alone at home, she makes and keeps the stuffing in the fridge so that they can make a quick sandwich for themselves and won’t go hungry in her absence. 😀

How to store the sandwich stuffing?

You can make a big batch of the mashed potato stuffing and store it in an air-tight container. Keep it in the refrigerator and it will easily last for 3 to 4 days (or even more).

Steps

Sandwich Stuffing
  1. Mash boiled and peeled potatoes in a large bowl until smooth and creamy. Set aside. 
  2. Heat vegetable oil in a skillet and add mustard seeds or rai to it. Let them splutter for a few seconds.
  3. Add curry leaves and saute for a few seconds. 
  4. Add chopped onion and green chili to the skillet. Saute until translucent. Do not brown the onions. 
  5. Add tomatoes and a sprinkle of salt. Mix well and let it cook until tomatoes are soft and well cooked. 
  6. Add red chili powder and coriander powder. Mix well.
  7. Add mashed potatoes and mix well. Let it cook on a medium flame for around 10 minutes. Stir occasionally. 
  8. Once done, add tomato ketchup and mix well. Switch off the flame and your stuffing is ready. 
  9. Adjust salt too.
Green Chutney
  1. Add all the ingredients in a blender jar and blend until smooth. 
Roasted Tomatoes
  1. Heat a pan and brush vegetable oil to it. Place tomato slices and roast on high flame. 
  2. Flip and roast from the other side too. Roasted tomatoes add a nice umami flavor to the sandwich. It tastes extremely good. 
Assembly
  1. Spread a generous amount of the sandwich stuffing on one side of the bread. Spread evenly to cover the entire surface. 
  2. Apply some green chutney on top of it. Layer it with roasted tomatoes and onion slices. 
  3. Place another slice of bread on top. Press gently. Repeat the same with other slices of bread.
  4. Brush oil on a pan and place the sandwiches on it. Brush oil on the top side of the sandwiches too. Toast from both sides on medium flame until golden brown and crispy. 
  5. Serve right away with a hot cup of chai or coffee. Enjoy the burst of flavors in every bite. 
Notes
  1. This stuffing would make 6 to 8 sandwiches. 
  2. Applying green chutney directly on the bread slices makes them moist and soggy.
